Everest Pav Bhaji Masala seasons the mashed vegetable bhaji served with pav, including the potato, tomato and capsicum used in the dish.
In Everest’s recipe, the masala is cooked with the onion and tomato before the boiled vegetables are added and mashed. This works the seasoning through the whole mixture. Butter and fresh coriander are added towards serving, with the pav warmed separately.
