Badshah Sambar Masala

Badshah Sambar Masala blends spices with tuvar dal, Bengal gram and rice for the dal-and-vegetable sambar served with South Indian meals.

Coriander, chilli, cumin and fenugreek are joined by curry leaves and asafoetida in the ingredient list. Badshah’s recipe begins by tempering whole mustard seeds and curry leaves in oil. The masala goes into the partly cooked vegetables before the cooked dal and tamarind are added.
