Idada is white dhokla. It's made with rice and urad dal rather than besan, so it's softer and milder than the yellow kind. The name comes from "idli" and "dhokla," and the dish really is a bit of both, soft like an idli but steamed and spiced like a dhokla. From scratch the batter has to ferment overnight, but this mix takes that off your hands. You add water, steam it for about fifteen minutes, and cut it into soft pieces with a gentle tang and a little pepper. Green chutney on the side is all it needs.
