Badshah Jain Chhole Masala combines coriander, cumin and red chilli with dried mango and a wider mix of aromatic spices for chickpea curry.
The pack recipe starts with soaked, pressure-cooked chhole. Cook the masala briefly over a low flame with oil and the other ground spices, then add tomato, ginger and green chilli. The cooked chickpeas go in afterwards, so the seasoning has time to flavour the base before the final simmer.
