Badshah Kasuri Methi is dried fenugreek leaf, used for its strong aroma in curries such as shahi paneer.
The leaves can be cooked into the gravy as well as used at the end. Badshah’s paneer recipe adds them to the tomato and ginger-garlic base before the cashew paste and paneer, giving the flavour time to spread through the sauce.
